Plant Based Bliss: An Introduction Class

Prior to permanently transitioning to a plant based diet, I experimented with a 2 week vegetarian introduction meal plan that I found on Pinterest.  My mother and daughter refused to join in, but my husband, who is always willing to try whatever I cook, hesitantly joined me in the experiment.

Meal by meal, day by day, for two weeks, the meals kept blowing our minds.  We were surprised at:

  • How delicious the meals were!  As an avid amateur chef, I had spent nearly 20 years preparing delicious meals, and these were some of the best I had ever made.
  • How satiating the meals were!  We expected to be starving all the time, but just plain weren’t.  They were every bit as filling and satisfying as the meat and dairy based meals we were used to.
  • How easy they were to prepare!  I expected to struggle not having any vegetarian cooking experience, but it was a non-factor for sure.  If anything, there was just more chopping involved, which is one of my favorite parts about cooking anyway.
  • How much healthier we felt!  I felt lighter, more energetic and more engaged in life.

It was few more months before I was able to wrap my head around a full time vegan diet, but this introduction to how amazing the food could be most certainly made the decision easier.

It is my goal with this class to share this mind blowing experience of how good plant based food can taste and how easy it is to prepare.
